I'm Back

It's been forever since I have been able to blog and I've missed it so much.SOOOO much has happened in the past 6 weeks!

My computer crashed and it took forever to be able to afford getting it fixed. My youngest son moved in with us until he goes off to basic in Jan 2011. Our oldest daughter has changed colleges and majors (instead of a vet she is studying to become a chorus teacher- which suits her more since she was in chorus all through school). High school started back for my youngest, she is a junior this year and is following in her older sister's footsteps and is now in Woman's Chorus Honors along with three other honors classes. My youngest son's car broke down so we had to buy him a new used car (can't afford a New New one). Now to work out all the little kinks in it so he can get in on the road.

I have missed Menu Plan Monday's so much and had actually stopped doing ANY menu planning since my baby boy moved in. I had forgotten how much a young man could eat! We have averaged between $250.00 to $300.00 a week! That is everything I make going for food every week!

I am contemplating going ahead and legally opening a family daycare. It would mean taking some classes, getting first aide and CPR certified, setting up a tax schedule, etc.... but, I think it would be a great step for me. I mean, I already have 5 toddlers between the ages of 17 and 22 months old! Just a thought I've been researching.

On the crafting front, I have started an afghan for my youngest. Just a Granny Stripe blanket in white, teal, purple, yellow and baby blue. She likes the colors so it's off and running! You can find the free pattern

Proud & Scared

My youngest son joined the Army this past week. He took the Oath yesterday and will be going off to basic training in January. I am so very proud of him! But, I am also scared. He will be enlisted for 8 years as a helicopter mechanic. He hopes to make a career out of it like my Father did (he was in the Army over 20 years and I grew up an Army brat).

Right now I am not sure of how I feel. I am proud, VERY PROUD. But, if he gets deployed over-seas, I will worry every minute that he is gone. I know that this is what he wants to do with his life but, it doesn't stop the worry. Are their any other Mother's of soldiers out their with advice ?

Menu Plan Monday

Today was both crazy and hectic. Sophia and Bryce both have colds. The triplets only took a thirty minute nap, Luke didn't take one at all and Sophia slept a good hour and a half. Luke didn't go home until 9pm and was cranky with a capital C! So, Menu Plan Monday is late. Here is the plan for the week:

*Monday: Pork ribs/ corn/ green beans/ collard greens (all leftovers)
*Tuesday: BBQ Chicken/ cauliflower / rice (none for me)
*Wednesday: Steak/ scalloped potatoes/ green beans
*Thursday: Herb roasted chicken/ pasta/ collards for me/ corn for everyone else
*Friday: Eat-out night
*Saturday: Burgers on the grill/ Salad
*Sunday: Whole chicken in the crock-pot/ mixed veggies

My Daycare Kiddies

I FINALLY think I've got the hang of uploading pics to the computer! So, I thought I would give you a little peek of my babies!

This is lunch time at my house! From left to right: Sophia, Luke, Chase, Bryce & Ashton!

Here is the lone girl! Sophia this past week. She is 14 months old and the resident DIVA! I have never seen another child as prissy as she is!

My "Little Man" Luke. He is 20 months old! I've had him the longest. And he LOVES to boss the younger babies around!

Ashton is the largest of the triplets, and 15 months old. Just look at those curls! Don't let the cuteness fool you! He is ALWAYS  bullying one of the others!

Bryce is the smallest of the triplets, again 15 months. Let me tell you, he is the little instigator! He is FEARLESS and HAS to be into something at ALL times! LOL, He always keeps me on my toes!

Chase is the quiet triplet. You find him off to himself, playing by himself or watching all the other babies getting into trouble. I think you can just see him just take it all in! When he gets older, I think he is going to be the sneakiest of the three!

This is snack time! Don't they all look like little angels? One quiet time of the day! Aren't they all just adorable? I swear, I love everyone of them like my own! And it is so much fun around here every day!

Bad, BAD Blogger!

Hello everyone! I know, I know, it has been almost two weeks since I last posted. I get so busy that at the end of the night, I completely forget to blog! I have had the Triplets more and they are a HANDFUL! I call them Triple Trouble.... you can just see the wheels in their heads moving -thinking of what to climb on next! And, they are learning to work together! HELP!!!!!

On top of that, Kirstey turned 18 and decided that she didn't like a rule we had set down. She had been leaving the house at 1 or 2 am and not getting home til 4 am. The Hubbeast and her got into a BIG argument where Kirstey cursed and then the Hubbeast started yelling. The next thing that I know, Kirstey is storming out the door at 9 pm WALKING! She wouldn't tell us where she was going or come back home. So, Summer texted her and found out that she was safe for me. She came home the next day and we had another talk. Her and the Hubbeast are so much alike, they HAVE to learn to talk without yelling at each other! We explained that even though she is 18, there are STILL rules that she has to follow. One is being home at a decent hour and my MAJOR one is no cursing!  I know that this is a normal phase when a child is becoming an adult. She is going to push the limits with us, but I can't wait til it all settles down again. I do not do well with stress with my children.

Also, I have started my low-carb diet again and have been sticking to it. I have lost 9 lbs in a week and a half. So, about 1 pound a day right now. I know it will slow down after this week but, I am ready for it. I actually feel a lot better and my legs have completely quit swelling! I can't wait to have my physical to see how it has effected my cholesterol and blood sugars!

I am going to try to get a post in 3 times a week from here on out. If I'm just doing Menu Planning, it's not much of a blog is it? So, I look forward to talking with everyone more often! Hugz!

This week snuck up on me somehow. I went and did my shopping without a list. Just my coupons with some ideas, Didn't do to bad... We spent $160.00 and saved $84.00 using MVP products and coupons. So, I saved roughly 33% this week

Here is the Dinner Menu Plan:

   Hamburger Helper / Salad

   Chicken braised with cream of mushroom soup served over egg noodles with a side salad

   Sloppy Joes with a salad

   Oven fried chicken with mashed potatoes and green beans

A Crazier Than Usual Week

Whew..... what a crazy week! This was my first week without Luke ;o(  His Mother lost her job last week and I was missing him terribly! Monday was my first "regular" day with the Triplets since April started back to work. Sophia usual gets here about 5:45 am, the Triplets arrived at 6:45 am. I try to keep them on the schedule that April has them on as much as possible.

Sophia decided to be miss Drama Queen this week. I couldn't get out of her sight without her screaming bloody murder! And god forbid one of the Triplets even touched her! LOL. Then April asked me to watch the Triplets overnight Tuesday night. Of course I agreed. We had so much fun! After Dinner (and these boys can EAT), we had bath time with bubbles ;o), then a story before bed. They slept all night this time around so, I got a few hours before Sophia arrived Wednesday morning. Again, she was Miss Drama Mama! Usually she is a really happy baby but, I guess she is going through a clingy phase. Her Daddy said that she had been the same way at home this week.

Thursday Luke came for a visit. His Mom said that he had been asking for me and since she had some things to do, she brought him over. He was here until 1 am Friday morning and we had a BLAST! You should have seen him in The Hubbeast's recliner! He knows how to work the leaver to raise to foot and would raise the foot, get in the chair with a pillow, grab his toy remote and lean back. LOL! It was ADORABLE! I wish I had gotten a photo!

Friday I just had Sophia. She was a little better with the drama. We sat in the floor and played- just the two of us- a lot. I thought that maybe with a little one on one time she would feel a little more secure. Most  of the day went well but, there were a few times when I had to leave the room that the drama started up again. It has to be her age (she is 14 months).

So, today is my first day off in a while. I am enjoying the quiet! LOL But, I can't wait until Tuesday when It all starts up again ;o)

Another great shopping week! This week my total was $108.00! That is less than half of our usual amount and almost down to my goal of $100 a week. But, since we only spent $23 last week, I say I am doing pretty good! I also managed to purchase ground beef on sale for $1.27 a pound and stocked up a little. So now I have enough chicken for 3 weeks and enough ground beef for 3 weeks. So, putting my good buys to use this week... here is this week's menu! And, don't forget to check out Org. Menu Plan Monday

This week was a good shopping week! All I spent for groceries was $22.90! I couldn't believe it! And part of that was buying lasagna noodles & cheese for The Hubbeast's Father's Day dinner. The Hubbeast couldn't believe it either! My pantry is FULL and I already had enough meats so, All I needed was milk, bread, juice & eggs!

Since I have started really working on getting our grocery spending in check, I had saved enough to buy The Hubbeast the recliner he has wanted. So, Saturday we went & he picked it out! It will be here later this week. Next I will put up the savings to purchase some new pots and pans!

Now onto this coming week's menu!

   Lunch: Leftover lasagna / green beans / yogurt / juice

Menu Plan Monday

This week went by so fast! With Summer's 16th birthday and Kirstey's graduation, it seemed like I barely had time to breathe! I did manage to get my shopping done yesterday and did pretty darned good this time! I only spent $122.03! That is half of what we use to spend! It's nice having a fully stocked pantry!

We also bought a new refrigerator this week. We put the only one in the garage so I can keep extra milk and juice for the babies instead of having to pick more up every 2 days! Also, I can still use the freezer for extra good buys! Plus, the Hubbeast gets to keep drinks cold as he works on his project cars!

Here is what I came up with for this coming week's menu. This is just from my pantry and some meats I bought this week for a song!

Menu Plan Monday

Since it is going to be a very hectic week this wee, I thought that I would keep the menu simple. Tuesday we have Kirstey's graduation rehearsal and both of my older boys will be coming in to stay the night. On Wednesday we have Kirstey's Graduation ceremony at 8 am (we have to be there at 6:30am). Then on Saturday with have a graduation party to attend! And Sunday will be my baby Summer's 16th birthday party.

So, this is what I have come up with !

   Slow cooker Chicken, potatoes and green beans

 Spaghetti or Lasagna to feed a crowd along with a salad.

   Going to Olive Garden to celebrate Kirstey's graduation

   BBQ Chicken, rice & corn

   Pig Picking Party

This is the plan, we will see how it goes. Since it IS Summer's 16th birthday Monday, she will get to choose dinner that night.

Needing Ideas!

I am needing some ideas of what to feed the daycare kiddies for breakfasts, lunches and snacks during the day.Feeding them mac & cheese and/or hot dogs for lunch isn't getting it.. So, I am asking my internet friends... What DO you feed 1 years olds that have stopped eating baby food? (I have 5 of them daily).HELP!

Menu Plan Monday

The past few weeks have been very crazy as usual. We are getting ready for Kirstey's graduation on the 9th of June. Programs, award's ceremonies, rehearsals, etc... She did go to the Thespian Club awards ceremony last night and won for Best Ensemble Member for her part in "Fiddler On The Roof"!

Also, I have had 5 kiddies 18 months and younger which makes for a pretty hectic day. By the time the last kiddie goes home, I am exhausted. I hadn't even thought about menu planning these past couple of weeks. But, this week I'm back on board! So, here is the plan for this week! I only list Dinner over the weekend because normally we fend for ourselves for breakfast & lunch on those days.

     Breakfast: Cinnamon Raisin Toast, an orange and milk for the kiddies, coffee for me
     Snack 1: Yogurt
     Lunch: Roasted Turkey Sandwiches, Salad, Fruit Cocktail and milk
     Snack 2: Animal crackers & juice
     Dinner: Amish Oven Fried Chicken, Potatoes & Green Beans

     Breakfast: Oatmeal, Applesauce & Milk for the kiddies, coffee for me
     Snack 1: yogurt
     Lunch: Chicken Salad, Carrots, Banana & Milk
     Snack 2: Cheese Crackers & juice
     Dinner: Crock Pot Bratwurst and Peppers, Potato Salad, Corn on the Cob

     Breakfast: Cereal , Mixed Fruit Salad & Milk (coffee for me)
     Snack 1:  Granola Bars
     Lunch: Left overs
     Snack 2: yogurt & juice
     Dinner: Crock Pot Garlic Brown Sugar Chicken, White Rice, Salad

     Breakfast: Eggs, Ham, Toast, Milk (coffee for me)
     Snack 1: yogurt
     Lunch: Chicken Nuggets, French Fries, Milk
     Snack 2: Animal crackers, juice
     Dinner: Eat-Out Night

Crazy Wednesday!

Today was crazy & fun! I am getting use to having a baby girl in the house 24/7 again! Plus the triplets came today! So, I had 4 babies that are all one year old - like having quads! They were all so good, play well together, and I even got them to take a nap!

The triplets aren't used to the cats. Ashton was scared of them, Bryce was just a little curious, and Chase was in love with petting Little-Bit! Sophia is so jealous! Chase took up with her and followed her around all day! And, of course since Ashton is bigger than his brothers, he HAS to be the bully! Bryce just flirts with EVERY girl! I'll have to take pictures when they come next Monday so that you can see how adorable they all are!

Angry & Frustrated!

Just posting a quick update on Rupert. And some STUPID Advice I have gotten!

I am so surprised on the difference in my Big Boy. he is so much happier! He is cleaning himself more, bright eyes and talking to me more! I hadn't really noticed a change in him except for his weight loss (he lost 13 lbs in the past 9 months).

He still HATES his antibiotics and fights me every time I have to give him any. But, not even 5 minutes afterwards he is back for me to pet & love. He is starting to realize what the syringe is and tried to move away when I have to give him his morning insulin. I hope he gets use to it and I hope it doesn't hurt him too much.

When he went to the vet on Monday his sugar level was 430! Normal is between 70 and 150 so it was REALLY elevated! I am hoping that when we go back next Saturday that the numbers are within normal. If not, he will be up to 2 injections daily.

A lot of my so-called friends are telling me just to put Rupert down and get another cat. I get so MAD! I raised Rupert from birth. Hand fed him his bottle every 2 hours, made sure he was warm, walked the floor with him. He is part of my family! Just because he is sick I should end his life? Throw him away like an old pair of slippers? I have 6 cats & 1 dog. Every one of them I LOVE. And, anything I can do to help them if they are sick I will do! Yes, it cost us $400 to take Rupert to the vet.... and, yes it is another $100 a month for his insulin is MY responsibility as his owner to take care of him! If I became diabetic, should I be put down?

So, we juggle the money a little bit more, I take on one or two more daycare kiddies, I cut back on my smoking.... we will make it work. What these "friends" don't understand is that what I need is their support, not their judgement!

Sorry for Bitching... but, I just had to get it out!

What A Fun Day!

Today started out terrible! Luke didn't go to sleep until midnight last night so, I got to bed around 1 this morning. We both got woke up around 6 am and neither one of us were very happy. Sophia arrived around 7:30 am. I got Luke dressed and we enjoyed breakfast.

Then it was time for me to give Rupert kittie his first insulin injection and antibiotics. He didn't even flinch when I gave him the shot but, I had to fight him to get the antibiotics in him! LOL  The three of us went out to play and of course Luke & Sophia had to fight a little (just for fun of course). We came in and had some choice time (whatever they wanted to do) and worked on a new sign (I teach sign language from about 9 months on), then we had snack time.

About 10:30 I somehow managed to get them both down for a nap so I cleaned the kitchen (it seem that no one else knows how to rake out a dish, load the dishwasher or unload it). I had enough time to sit for 10 minutes to have a relaxing cigarette before Sophia woke up. Luckily Luke slept until noon.

Everyone got up & diapers changed, it was time for lunch. Grilled cheese, green beans, and apple juice all around! It was cute to see them fighting over the highchairs! And, Luke actually started kissing Sophia! I wish I had my camera ready! TOO CUTE!

We played with the dolls for a while, had some learning activities, music time and had a snack. Sophia's Father picked her up around 4 pm. Then all Hell broke loose with Luke! I couldn't get out of his sight! He wanted to be under my feet no matter what I was doing. I think he misses his Momma!

I got him fed at 6 and we played until 7:30. We had a FUN bath time (he won the water fight by the way) and I got him in bed about an hour ago.

And the hubbeast wonders why the house looks like a tornado hit it! LOL

Today started out crazier than normal around here. The Hubbeast had to run Rupert kittie to the vet due to blood in his urine & vomiting. I just got the call that he has a UTI and diabetes. So, now I will be injecting him with insulin once or twice a day. I am just so happy that we caught it in time and that he is going to be OK.

Also, I have Luke from now until Friday day & night, We are going to have so much FUN!

FUN Week!

Sorry I haven't been posting that much lately. I sometimes get so caught up in day-to-day life that I remember that I forgot to blog when I lay my head down at night. This week is even worse since the Hubbeast left for Phoenix to spend a week with his family. Thank goodness he will be back on Monday, I miss having an adult to talk to!

I have had daycare kiddies late this week and starting next week I will have 1 year old triplets 2 days a week. That is a total of 5 under 18 months! LOL We are also getting ready for graduation and prom, etc... for the oldest daughter.

And next month is going to be even more hectic! I have Luke and Sophia from April 30th until May 9th- day and night. Then I have the Luke & Sophia during the day and the Triplets from the 12 through the 19th day and night.  Can you tell I just LOVE my daycare kiddies???? Really, I couldn't see myself doing anything else but, it can be tiring sometimes.

And, with the Hubbeast gone, I forgot to make a menu and we have just been eating whatever, so no menu posted for the week. I'll be so happy when things settle down around here. I've almost forgotten what calm is ;o) Well, I'm going to take a bubble bath and sip on a bottle of Chardonnay! Hope everyone has a good week!

Dreaded Schedule Change!

Well, starting this coming Monday I will have to follow a new schedule. I HATE when I have to change this around, the first week is always crazy. But, I start having Sophia full-time and will have to adjust. Usually I have from 8:30 am until 11:30 am to get all of my housework done before the daycare kiddies start to arrive. Now I will have to get up at 6:30 am and try to get everything done by 8:30 am. Now, I am so not a morning person!

I know it will take me an hour just to wake up & get motivated! I may have to dust off my coffee pot LOL. But, it also means that maybe I will get my sleep schedule straightened out. I suffer from insomnia and usually don't get to sleep before 2 or 3 in the morning (and that is with prescription sleeping medication). After a couple of days getting up at 6:30 am, maybe I will be able to get to bed by 11 pm.

Well, we will see how it goes!

Calgon Take Me Away!

Have you ever had "one of those days"? Well, this week, today was my "those" days! It all started so innocently, I did my usual wake up, get coffee on, meet Destiny, watch some news, grab second cup of coffee & book while waiting for the bus. Then my usual let the dog out, clean the living room & kitchen, watch Steve Wilcos. Then Luke was dropped off,  (it IS 11 am), he slept late so it will be a late nap.  Then, Sophia is dropped off. His Mom stated that she JUST woke up from a LONG nap so she is wide awake, but no Lunch yet. She made a snide comment about how she expects to see her first steps instead of me. It wasn't what she said, but how she said it that kind of got under my skin.

I spend the next few hours trying to feed both with 1 high chair, breaking up fights, trying to save the cats, getting bread in the oven (did I mention that I made bread dough earlier today)? And singing several rounds of B-I-N-G-O and Itsy-Bitsy Spider. I tried to get Luke to take a nap around 3:30pm but he just screamed in the crib for 20 minutes (OK, maybe it was 10). By that time Summer was home as was Destiny and it was time to get the Pork Loin in the oven. (Was that on the menu for today?... I forget).

I got that done, homework started, when Luke's father called to see if it was OK if he came late... 9 to 9:30 pm. I said OK while cleaning up apple juice from the floor. Sophia's father picked her up and I thought, whew... I can relax. Then Luke decided to torture the cats one more time. Kirstey came home and said that she wasn't eating what I cooked (I told her fine-go hungry). The Hubbeast called and said that he was going to be late. I am still smiling ;o)

The rest of the night is a blur. Luke crying, the girls fighting, cats screaming, the Hubbeast just sitting there (once he got home). By the time Luke's father picked him up at 10:30 pm, he had earned a new nickname- Grumpy Puppy! By 9pm he was so tired that he couldn't stand himself! I walked the floor, rocked, sang, tried to play, he just sat in the floor screaming.. throwing EVERYTHING I tried to sooth him with. FINALLY he passed out while I was walking with him and slept for 20 minutes while I held him... afraid to lay him down.

It is now after 11 pm, I have had 3 glasses of wine, have a migraine, haven't eaten dinner (it so east to forget) and everyone else is in the bed dreaming away! Sometimes I wonder WHY do I do this? Why do I work so hard? Why does it matter to me so much? Then I remember the look on my daughters faces when they ate that bread today that I made (they REALLY love it) and how they are with the younger children.. How The Hubbeast had a warm dinner to come home to after working 18 hours (and complimented me on how tasty it was). How he tried (notice I said tried) to help entertain Luke tonight. How Luke curled up into my arms tonight finally drifting off  to sleep. How Destiny looks up to me and values my opinion about anything, how Sophia says my name..OOOORAH... (for Lora) and reaches her little arms up for me to pick her up, hugs me and blows me kisses.

Even on this crazy day.... I do this because I LOVE it!  But darn it... sometimes, in the midst of it all, I am wishing for Calgon to take me away!

Thrifty Thursday-Cutting Costs of Prescription Medications

Today I want to talk about being thrifty with prescription medications. At the beginning of the year, we found out that since our medical insurance was changing, we would have to pay for our medications out of pocket. At the time, just ONE of Summer's medications was $550.00 per month (yes, you read that right) and that was for the generic! Well, there is no way we could afford that let alone the medications that Kirstey and I are on so, I did some research, made a few phone calls and came up with the follow helps. I thought that I would share them with you.

1. Call around to different pharmacies to get the lowest price.
2. Ask if the pharmacy has a program to help (most do).
3. Ask you doctor if there is a different medication for the same condition that may be cheaper.
4. Contact the company that makes the medication. A lot of them have programs where you may even get the medication for free!

I am sure that there are other ways to lower medication bills but, this is what worked for us. By utilizing these steps, we cut our medication bill my almost $750 a month! We wouldn't have been able to afford the needed medications otherwise!

Menu Plan Monday-Late

Yes, I know. I'm late this week. I just didn't feel well yesterday so I took it easy. It's been fairly crazy around here lately. Most nights the past couple of weeks I have Luke late. I love him to death but he is VERY active and has learned how to fight taking a nap. So, some days there is no nap and then he is Mr. Crabs by 7:30 pm. Then I have to keep him up until his parents get here between 8 and 10 pm. He is REALLY demanding on the days that I have Sophia. He is SO jealous. She is a good baby and looks at him like he is crazy LOL.

Then we have so many things to do over the next few weeks. Kirstey's play, the Hubbeast's trip to Arizona in April, Kirstey's trip to Tennessee with the chorus group, my MIL is coming for a visit, Kirstey's prom, graduation, college, etc......Sometimes I just wish for a week with no major plans! On the 28th, The Hubbeast and the girls will be going to a drag race. The Hubbeast asked if I wanted to go but, I told him that I would rather stay at home with quiet. Plus, he could have a date day with the girls! So, I am SO looking forward to the 28th!

Our menu plan went well last week. We will see how this week goes!

Thrifty Thursday- How I Could Do Better

     I read a lot of blogs about being frugal, thirty, budgeting, etc.... And I have learned a great deal over time. But, I have been thinking of how I could do better with our budget.

     The Hubbeast and I had decided to budget $100 a week for groceries back at the beginning of the year. Now, some weeks I can go as low as $65 but, some weeks it can be as high as $175- and that is AFTER the savings using coupons!I could do a lot better here.

     I also am WAY to indulgent with my teen daughters when it comes to money. I know I am. I know I need to pull in the reigns in this area. I justify giving them extra spending money by telling myself that "They are both on the honor roll", or "but, they are such GOOD girls and give us no problems", etc.... I now that I am not only hurting our budget but I am also not teaching them good financial habits. This is another area that I REALLY need to work on.

     I don't particularly spend money on myself. But I do spend on the children I provide daycare for. It is nothing for me to see something adorable, cute educational, etc... and pick it up for the daycare kiddies. Just this past weekend as I was shopping for a baby shower, I saw a little pink car that changes from a push-behind toy to a ride-on toy. I already have one in green for Luke BUT, he doesn't like to share this toy with Spohia. So.... I picked up the pink one for her. Now I got a steal on it but, I SHOULD have just passed it up and worked with Luke on sharing and taking turns instead.

     I could go on and on about other ways I could be thriftier but, those are my MAJOR slip-ups. What about you? Are there ways that you know that you could improve?

Missing My Hubbeast

     I know, I know.......a very personal subject. But, today that is what I am feeling! The Hubbeast works in the commercial HV/AC  and refrigeration business as a technician. This sometimes means that he can put in close to 100 hours in a week. You would think that after 21 years, I would be use to not seeing his mug for days on end wouldn't you? Well, when the children were younger, I had them to keep me busy 24/7. Now that the oldest two are on their own and the youngest 2 are teenagers I find myself alone a lot of the time after the daycare kiddies leave for the day trying to fill the hours until the Hubbeast pulls in the driveway. And, after his long day, most of the time he goes straight to bed after a quick kiss and an "I'm tired".

     It has gotten so bad that (now... your going to get a BIG laugh out of this), I have been dreaming of him cheating on me the past week . LOL. I told him about it this morning. And, what did he do??? Laughed, patted me on the hiney, and kissed me before heading out the door.I so hope that he is home at a decent hour tonight! I know he is exhausted. And, I miss having him to talk to at night. LOL, books and knitting can only fill so many hours!

Menu Plan Monday


Last week's menu plan went OK. We didn't have the pork ribs on Wednesday or the shepherd's pie on Saturday.  I had forgotten about a baby shower I had to attend on Saturday so we just had hot dogs and tots.
The rest of the week went as planned. Hopefully this week will be better!

You may notice a slight difference in the meals. My oldest daughter and I both suffer from PCOS and have been ordered by our doctor to follow a low-carb diet to help with the symptoms. So, you will notice some strange combinations for us. Here is the plan.

  Garlic herb pork lion
  buttered egg noodles (roasted zucchini for me & Kirstey)
  green salad

  Ranch Parmesan Chicken
  brown rice
  corn (a salad for me & Kirstey)

  Tasty Crock Pot BBQ Country Style Pork Ribs
  mashed potatoes (mashed cauliflower for me & Kirstey)
  green beans

  Roasted chicken
  some type of pasta (a green salad for me & Kirstey)
  Brussels sprouts

  Left-over buffet

  Eat-out night

  Roasted whole chicken
  dressing (roasted root veggies-sans potatoes for me & Kirstey)

Thrifty Thursday

 Shelly at The Coupon Teacher posted a questionnaire today and I thought that it would be fun to join in and answer!

How Thrifty Are You?

1.  Do you use coupons to save over 50% or more on your groceries?  I use coupons but, I usually save 25 to 35%. I just can't seem to get it higher for some reason.

2. Do you reuse paper products like foil, plastic baggies, or plastic utensils?  Yeppers! Though, I do not buy plastic utensils, I do wash & reuse plastic freezer bags and I reuse our plastic grocery bags (I have even crocheted purses out of plastic grocery bags).

3. Do you buy things like clothes, home goods, or entertainment items for full price? I usually visit the thrift store first, then look for sales in retail stores. If I REALLY need it, I will pay full price.

4. Do you eat out more than once a week?  No, we only eat out once a week- usually Friday nights. Sometimes, if money is extremely tight we will skip this and make something special at home instead.

5. Do you feel an obligation to take free samples or toiletries in hotels? Oh yes! That is what they are for isn't it?

6. Do you send it more than one mail in rebate a month? No. Actually I have never sent in for a rebate.

7. Do you feel an obligation or need to stop at every yard sale you pass? Not at all. I do look as we drive by though.

8. Do you recycle items on Freecycle or for money? No. I donate most still nice items that we do not want / need to our local thrift store.

9. Have you lowered all your bills to the smallest amount you can pay for acceptable services? We are trying to do this. It will take some time. We have gotten the credit cards paid off and now own NONE!

10.  Have you figured out the best way to save money is to spend less and stretch all you have as far as you can? I am working on the stretching. But, being thrifty is a learning process .

Sharing A Recipe

This past Sunday the Hubbeast and I took a trip to our local thrift store. I was looking for a container that I could keep my Artisan bread dough in and some scrubs to wear during the day (I am always getting spit-up on or worse). Well, I didn't find a suitable container for the bread dough but I found the scrubs. I also looked over the book section and treated myself to a cookbook for 50 cents (you can't beat that).

The cookbook is the Congressional Cook Book and it isn't dated but, I am assuming that it was published when Reagan was in office by some of the titles. After we returned home, I was looking through the book and found a recipe for Pound Cake. I had all of the ingredients so I gave it a try. The Hubbeast liked it so much that he took half of it to work with him the next day! I thought that I would share the recipe with all of you!

Hattie's Pound Cake

* 2 sticks unsalted butter
* 1/2 cup shortening
* 3 cups sugar
* 5 eggs
* 3 cups cake flour
* 1 cup milk
* 1 tsp. lemon extract
* 1 tsp. vanilla extract

Blend butter, shortening and sugar together. In another bowl, blend eggs, flour and milk together. Mix with butter mixture and add extracts. Pour into bunt pan and bake for 1 hour and 10 minutes at 350 degrees.

What? My Family is SPOILED?

Yes, you read the header right. I have been told by a certain "friend" that I have spoiled The Hubbeast and the kiddies! I thought that I was just being thrifty! You see, I LOVE being a wife and a SAHM. I truly believe that it was what I was meant to do with my life.

When I cook things from scratch I get accused of spoiling my family! What the "Friend" does not understand is that I ENJOY cooking! I always have! Not only is it cheaper to make most things from scratch, it is also healthier (you know what is in there), and it tastes better! Plus I LOVE the look on my family's face when they enjoy what I make! The look on their faces when they take that first bite of cheesecake or homemade bread is priceless and makes me feel so good!

I make my own laundry detergent because the Hubbeast and eldest daughter have EXTREMELY sensitive skin and cannot use most commercial detergents! The only ones that they do not react to are the "baby" detergents and they are pricey! So, I make my own to save not only money but for the health of my family!

Now, this "Friend" is also the first to ask me to cook for the parties that she likes to throw. It never fails! As soon as she starts planning I get the call...."Can you make 4 dozen mini cheesecakes for me"? "Can you make 5 dozen mini quiches for me"? "You know how everyone LOVES them"! LOL It  sometimes drives me crazy! But, it is flattering at the same time.

Does anyone else get this from people? The "spoiling" your family from people who have no clue?

Menu Plan Monday


Last  week's menu was mostly a success! The only night that did not go as planned was Wednesday night. The girl's wanted to go out for Asian cuisine, but I was exhausted so, they had a date night with the Hubbeast and brought me home some pot stickers (my absolute FAVORITE). The rest of the week went as planned.
This week will hopefully go as planned. We will see!

Thrifty Thursday

Today's Thrifty Thursday's post is going to be about what I do to earn extra money while being a SAHM.

     I have not worked outside of my home since I found out I was expecting my oldest daughter almost 19 years ago. But I have made a small income during that time. Mostly I run an in-home daycare and charge a reasonable rate (most people think I give it away). 90% of the children I care for come from single-parent households and if I charged more, the parent couldn't afford daycare. This allows me to earn extra funds, gives the children a loving, nurturing environment and has allowed me to be home to raise my 4 children. Plus, I am at home anyways so I would rather be doing something productive that trying to find something to keep myself busy. Right now I have 4 children that I provide care for (Destiny 10 who I have 5 days a week, Landon 5 who I have occasionally, Luke 15 months who I have 5 days a week, and Sophia 9 months who I have Tuesdays, Thursdays and Fridays) and starting Monday I will have 10 month old triplet boys on Mondays.

     I have also made a little extra money by knitting or crocheting for profit. I knit socks for an alpaca farm for about a year. I have sold items I have made to friends and family. I also make Birthday and Holiday gifts which in turn saves me cash.

     The funds that I make pays for my girl's lunches, puts gas in my daughter's car, pays our water bill, buys our groceries,  pays for my girl's cell phones and I have even got a small emergency fund- all being a SAHM. The Hubbeast then covers the rest.

I hope everyone had a great Valentine's Day! The Hubbeast and I just spent the day together doing much of nothing. It was really nice not to worry about household chores, cooking, etc... But, today it is back to work ;o)
The Hubbeast went to the grocery store for me on Saturday (I won't get into the car if there is snow on the ground). He did REALLY well and pretty much stuck to my list! We only spent $64.00 for the week! That is $36.oo BELOW our budget! Woo hooooooo!

Thrifty Thursday

Thrifty Ideas For The Kiddos

Running an in-home daycare, I have learned quickly how to save some money when it comes to the kiddos play toys. I have found that children love to play with the simplest of things. I save toilet paper and paper towel rolls and they love to use them as swords, eye glasses, microphones, etc. Empty plastic containers make the best drums, shakers and toddlers LOVE to put smaller toys inside. Newspaper makes a good drop cloth for finger painting, coloring or playing with modeling dough. And, when I am in the kitchen, a few plastic bowls and some wooden spoons become a drum set! So, look around your home in a different light, think what a child would do with an object. If it is safe, some or the oddest items give hours of fun!

Meni Plan Monday

This week is going to be a little crazy. I've added another infant to my in-home daycare so now I have my 2 teen-aged daughters, Destiny who is 10, Landon who is 5, Luke who is 15 months, Ashton, Bryce & Chase who are 10 month old triplets (I only have them occasionally)  and now Sophia who is 9 months old.

I'm definitely going to get a better routine down with everything. Housework, schedule planning, menus, etc....

I want to try to work in Breakfasts sand Lunches in my menu plan too but have NO idea of what I could feed the 3 frugally and healthily. And some of them are very picky and Sophia is still on baby food and formula.

I would apprecialte ANY & ALL suggestions in this subject.

Here is the menu I came up with for the week. We haven't done our shopping yest so I am going with what is on hand again.

  Breakfast: Oatmeal, banana, milk
  Lunch: Ham Sandwiches, yogurt, juice

   Pancakes, apple slices, milk
    Leftovers from the Pineapple Chicken &  Rice, milk
   Meatball Subs

      Cold Cereal Juice
      Leftover Meatball subs, veggie sticks, milk

      BBQ Chicken
     Mashed Potatoes
     green beans

   Breakfast: Scrambled eggs , toast, mikl, 1/2 banana
   Lunch: Han Sandwich,  Macaroni & Cheese, carrot sticks, milk

   Beef roast
   mixed veggies

  Breakfast: Granola bar, apple slices, milk
  Lunch: Leftover beef roast veggies milk or juice
    Herb Crusted Chicken
    Pasta salad

  Breakfast: Bagels with cram cheese, coffrr, milk or juice
  Lunches: Sandwiches & Chips Tea
   green beans 

Fend for yourself day.

We will see how if goes. It has to help lunches go smoother!

Thrifty Thursday

Today is Thrifty Thursday and the only thing I am coming up with is to shared the recipe for homemade laundry detergent that I use. I use a powdered for and it especially cheap to make.

Powdered Laundry Detergent:
* 1 cup grated bar soap (I use Ivory but you can use most any).
* 2 cups borax
* 2 cups washing soda (not baking soda)
* 1/2 cup Oxy-Clean

Mix all ingredients and use 1 to 2 Tbsp. per load. Just 1 to 2 Tbsp!

Menu Planning Monday


Being snowed in, I cannot get out to do the weekly shopping so....I am making due with what I have on hand. As soon as the roads clear enough to be able to get out of the driveway, I'll update the menu plan.
Here is what I have come up with:

Freezer Cooking Update

Just a quick update on this past weekend's cooking. Being snowed in really helped being able to get things done! LOL

Freezer Cooking

Well, I was all prepared for a good Freezer Cooking this weekend then....I had the daycare kiddies late on Friday... The Hubbeast had to make an emergency stop at the grocery store due to an upcoming storm....and we got 5 inches of snow!

I forgot to tell the Hubbeast to pic up freezer bags and/ or vacuum sealer bags. So, the cooking for my Freezer will not be as hoped. But I will still do what I can.

Here is what I have planned to make:
*baking mixes: pancake, cornbread and possibly cake mixes and brownie mixes.
* ground beef  for chili, tacos
* meatballs

*possibly some bread

I will continue to look for other ideas. I only have a very small amount of freezer space (just the one above my fridge)so I have to be careful.

Dreaming of Spring

Yesterday was so much fun! I had the girls home (which is a rare occurrence these days when school is out). Kirstey did slip out for a while to hang out with some friends. I have a very productive day cleaning. Summer bleached the kitchen counters and mopped the floors for me while I got outside and pruned the hedges. It was SO nice to be outside actually doing something.

It actually got me dreamiong of Spring. Of what I am going to plant in the flower beds. I'm trying to decide on which bed will become my annual bed and which ones will be planted with perennials and which will be veggies and herbs. I am thinking of the front bed for the annuals. I am also thinking of planting some hostas or ferns underneath the Birch trees in front. Some hanging baskets for the porch and maybe some window planters this year.

I know that I am planting some new rose bushes in the back bed but I am not sure of which variety. I have to have at least one yellow rose bush. Just have to! Some white also. They would go so well with my blue hydrangeas! I have also had my eyes on some canna lilies, some lavender and some giant black elephant ears this year. Summer wants to do a purple and yellow bed. She had never planted anything but I may give her the small bed this year. And, of course, Kirstey HAS to have a bed in burgundy and black! We will make her a new bed this year. It is going to be hard finding anything that blooms black!

We are also putting in an arbor in place of two cedar trees that lost the battle with bag worms. I think that the Hubbeast has decided to try to build one himself. I told him that it HAS to have a bench built in along with some planters. I am thinking of either climbing roses, ivy, morning glories or honeysuckle to cover the arbor. I am leaning towards the honeysuckle for the fragrance (but, also thinking of the bees that it will attract).

I'm usually not very good at growing veggies. So, I am starting small. Just some tomatoes & peppers I think. And if they don't do well, I will be heading to the farmer's market anyhoo. For the herbs I am planting basil, parsley, sage & oregano. I already have a gorgeous rosemary bush that needs pruning when it warms enough.

Is it just me or is anyone else dreaming of Spring?

Eat From The Pantry Challenge

This is my last week for the Eating From The Pantry Challenge. I must say I haven't bee perfect but, I DID cut our spending quite a bit! Yesterday we made our last shopping trip for the month and here is what I purchased:

*3 lbs ground beef
* container of kitty littler
* Kitty Food
* milk
* eggs
* sugar
* lettuce
* 1 cucumber
* bananas

I spent a total; of $48 (our kitties are spoiled and will only use 1 type of litter and only eat 1 type of food).
The girls are starting to fuss about the lack of snack choices LOL.

What I have learned this past month is that we actually do not NEED as much as I was buying! I have cut our spending WAY down and I think we have been eating a LOT better. I will definitely be looking at my shopping & spending a lot differently from now on. Thanks to MoneySavingMom & LifeAsMom for hosting this!
