Slow-Cooker Saturday!

Sorry I haven't been posting, I got hit with a nasty cold this week. Still feeling a little weak but much better. And, since today is "Slow-Cooker Saturday" here is another recipe:


Whole Chicken Crock Pot Recipe

Tender, fall-off-the-bone chicken! Skip the overnight refrigeration if you are in a hurry. For variety, eliminate the onion and substitute a quartered lemon or two, stuffed into the chicken cavity.

SERVES 4 (change servings and units)

Ingredients

* 4 teaspoons salt
* 2 teaspoons paprika
* 1 teaspoon cayenne pepper
* 1 teaspoon onion powder
* 1 teaspoon thyme
* 1 teaspoon white pepper
* 1/2 teaspoon garlic powder
* 1/2 teaspoon black pepper
* 1 large roasting chicken (with pop-up timer if possible)
* 1 cup onion, chopped (optional)

Directions

1. In a small bowl, combine the spices.
2. Remove any giblets from chicken and clean chicken.
3. Rub spice mixture onto the chicken.
4. Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I'm always in a hurry).
5. When ready to cook, put chopped onion in bottom of crock pot.
6. Add chicken. No liquid is needed, the chicken will make it's own juices.
7. Cook on low 4-8 hours.


Now off to plan Kirstey's Birthday party which is at noon tomorrow! Thinking of doing finger food (since the Hubbeast caught the grill on fire- FUNNY story I'll tell another time). Thinking pinwheels, slow-cooker buffalo chicken dip with corn chips, my bacon crescent rolls, some stuffed mushrooms and possibly some meatballs or cocktail weenies. She has chosen an ice-cream cake this year ;o)

My- Day Monday

Well, today is My-Day Monday, the one day a week I take for myself. It started with me being woke up by Kyrah barking (my German Shepherd) because of a thunder storm (she is terrified of thunder). Now, I am so NOT a morning person so I was quite the Bitch for a while. I put some laundry on, made my breakfast and woke up fully.

After the daily chores, I got on-line to find my next project. I had it narrowed down to two patterns. Either "Hey, Teach" or "Candlelight Kimono" . I chose "Hey Teach" since I am loosing weight and not sure if I will be able to wear the smallest size of the "Candlelight Kimono". So, I got out my size 8 needles, my off-white Red Heart yarn and cast on. I got quite a bit done while watching the movies "The Skeleton Key" and "The Bone Collector"! And I even got to do my hair & make up today!


Today is also a bittersweet day for me. It is my daughter Kirstey's 17th birthday and the 16th anniversary of delivering my son Phillip stillborn (yes, he was born on her first birthday). I try really hard to make the day good for her but she always says "I wish I could really be sharing my birthday Mom". She remembers too. We always let the kids choose their birthday dinner so, she wanted Applebee's. We also gave her a $50 gift card to Barnes and Noble (she is addicted to books...especially anything about vampires)LOL. She is now spending the night with her best friend.

We are throwing her party this coming Sunday so I have a lot of planning to do. I am not sure of what I am going to serve. I was thinking of stuffed burgers but it would be WAY to expensive for so many people. I guess I will wait until the weekly sales fliers come out on Wednesday and go from there. Also, everyone is asking for my to make one of my cheesecakes but, we are going to have birthday cake so... maybe not.

So, that was my Me Day... now off to watch Harper's Island (on DVR) and knit some before bed. Night all!

Shopping Sunday

Well, today was Shopping Sunday! The day when I play a game with myself to see how much money I can save on groceries for the week. I got out the sales fliers and my coupons and hit the store with the best deals of the week.

I did pretty good! Between the store specials & my coupons I saved $98 and some change(that brings my total saving for a month to $376.00)!The best weekly total since I started shopping sales. One special I missed (and don't know how) is the special on laundry detergent. You buy 2 bottles & get 3 free this week! 3 FREE! The Hubbeast is going back for that- he will pick up 10 bottles (the limit you can get).

We got home & Angie came over to clean my bathroom & dressing area. Let me explain- she is a friend that I baby sit for (Destiny's Mother). She had gotten behind on paying me by $300+ and is a single mom with a very limited income. But, she does work for a maid service so......since I HATE housework (but I do clean daily), we bartered. She will clean for me and I will watch Destiny. It helps me out a lot since it is hard for me to get everything done with so many kiddos. I get the basics done, don't get me wrong but a lot of things that you don't normally do daily I just forget like dusting, baseboards, the blinds, cobwebs, etc....

Tomorrow is Me Day Monday so I get to relax & do some crafting after getting laundry done & vacuuming! I need to start a new project so, off to look for some patterns that talk to me!

Slow Cooker Saturday!

Today is the first day of Slow-Cooker Saturday! Every Saturday I will post a new slow-cooker recipe and/or a link for a new recipe. The winning recipe for today is............one of my FAVORITE foods...........


Chicken & Dumplings


Ingredients:

* 4 chicken breast halves
* 2 cans chicken broth (3 1/2 cups)
* 1 cup water
* 3 cubes chicken bouillon or equivalent base or granules
* 1 small carrot, chopped
* 1 small rib celery, chopped
* 1/2 cup chopped onion
* 12 large flour tortillas

Preparation:
Combine all ingredients in slow cooker, except tortillas. Cook on low 8 to 10 hours. Take out chicken and remove meat from bones, then place broth on stove in large pot. Cut chicken into bite-size pieces and return to broth on stove top. Bring to a slow boil.

Cut tortillas in half, then in 1-inch strips. Place strips into simmering broth and boil gently for 15 to 20 minutes, stir occasionally. Broth should thicken but if too thin, combine 1 tablespoon cornstarch with just enough water to dissolve and stir into broth. Cook 5 to 10 minutes more.
Serves 4.

Starting Today

Well, today is the launch of my blogging life! Nice to meet everyone! I guess I should introduce myself first.

My name is Lora, I am a 38 yr old SAHM of 4 (2 adult sons: Michael 23 and Robert 20), 2 teen daughters (Kirstey 17 and Summer 15). Married to the Hubbeast (Jeff) for 15 years. We live in NC and LOVE it.

Besides being a SAHM I also provide daycare in my home for several children. Right now I have Destiny who is 10, Landon who is 4 and Luke who is 7 months. In a few weeks I will also have 12 week old triplets Ashton, Bryce & Chase 2 days a week. I also enjoy reading, cooking, knitting & crocheting!

I am trying to learn frugal living. I have been spoiled by the Hubbeast and never given a budget so this will all be new to me. The first thing I have started doing is shopping sales & using coupons when we buy groceries and I have averaged saving $75 a week for the past month! I have also started stocking the basics and trying to keep the stock up for times when we may not have the funds available for a usual grocery trip. Also, I am saving up for a freezer to take advantage of even more savings.

Anyone have any good tips on frugal living that you would be willing to share?
